SPICES, CASINGS AND INGREDIENTS

We hand-mix all of the ingredients in our recipes and think you should too if you like really unique flavor profiles. The
spices, casings and ingredients on this page are the same we use in our sausage kitchen. Note: a "hank" of natural
casings is the industry standard measure for purchasing hog and sheep casings and (depending on the diameter)
will stuff 80-100 lbs of sausage.  Fresh, salted, natural casings will last indefintely under proper refrigeration and should never be frozen.  You can save tons of money on spices if you buy in bulk and save shipping costs by buying locally. If you think you will use a full pound of any particular spice within a year, you really should consider the bulk option because you are paying way too much in the supermarket!
